Peking Duck - Hyatt style (3rd Installment)

Mum is a big Peking Duck fan. It's fair to say that she has tried many incarnations of the dish in Hong Kong and elsewhere in the world. But then she had never seen the duck that she's about to eat being roasted, until she went to Grand Hyatt Macau and ordered her favorite dish. As soon as she finished a 18-hole round of golf in the Westin golf club in Macau, she jumped on a taxi and went straight to the newly opened Grand Hyatt.

Serving just 2 people in the whole Chinese restaurant, the chef had his undivided attention on cooking the duck to perfection and then cutting the duck up.
